Ingredients (two servings)
4 to 5 Medium size zucchinis1 Med White or yellow Onion, finely chopped
1 Clove Garlic, crushed
10 cherry tomatoes
1 Tbsp Oil
Salt
Black crushed pepper
Method
Cut zucchini into thin, noodle-like strips. Toss with the 2 teaspoons salt, and place in a colander to drain for 30 minutes.
Bring a pot of water to boil. Add zucchini; cook for one minute. Drain; rinse immediately with cold water to stop cooking.
Heat olive oil in a large skillet over medium-high heat. Add chopped onion and garlic first; cook and stir until just tender, about 5 minutes. Then add cherry tomatoes.
In the end, add zucchini noodles. Season to taste with salt and pepper. Instead of table salt, premixed seasoning salt can also be used for added flavor.
